Zaatar Roasted Chicken
Ingredients
For the Chicken: 1 whole chicken (cut into quarters, halved, or flattened) 2 tsp Maraqah Chicken Stock Base Olive oil (for drizzling) Pomegranate molasses (for drizzling) 4 tbsp dried mint 1/4 cup zaatar mix (plus extra for garnish) 2 tsp salt For Garnish: Fresh mint leaves Sumac Pomegranate seeds (optional)
Method
1. Prepare the Chicken:
Preheat your oven to 200°C (390°F).
Prepare the chicken by cutting it into quarters, halving it, or leaving it flattened, depending on your preference.
2. Marinate the Chicken:
In a small bowl, mix 2 tsp Maraqah Chicken Stock Base with the olive oil and pomegranate molasses for easy application.
Place the chicken in a large dish and drizzle both sides with the prepared mixture.
Sparingly sprinkle both sides with dried mint, zaatar mix, and salt. Gently rub the seasonings into the chicken to coat evenly.
3. Roast the Chicken:
Place the chicken pieces in a roasting tin, skin-side down if using skin. Roast for 15 minutes.
Flip the chicken over and roast for an additional 25 minutes, or until the chicken is golden and crispy, and cooked through (internal temperature of 75°C/165°F).
4. Serve and Garnish:
Transfer the roasted chicken to a serving tray.
Garnish with extra zaatar, fresh mint leaves, sumac, and pomegranate seeds (optional) for a vibrant finish.
5. Enjoy:
Serve hot with a side of vermicelli rice, a fresh salad, or roasted vegetables for a complete meal.
